This is a cute simple breakfast idea that was a hit with my 6 year old cousin.
Ingredients:
1 portabella mushroom cap
1 egg
1 tsp garlic powder
2 tbsp olive oil
1 cherry tomato (yellow if you want the same effect)
1/2 tsp paprika
1 tsp oregano
1 tbsp shredded cheese of choice
pinch of pepper
Instructions:
1. Place the mushroom cap in a medium bowl and pour in olive oil
2. Coat the mushroom with oil all over and then add garlic powder and coat it well again (outside and inside)
3. Allow it to marinate like this for 10-15 minutes
4. Preheat oven to 350
5. Grease a baking sheet
6. Place mushroom on baking sheet and crack an egg into it
7. Season the egg with paprika, pepper and oregano
8. Place shredded cheese around the white of the egg and slice the cherry tomato in half and place slices near the yolk (like eyes)
9. Bake for 25 minutes
10. Enjoy!
