Tomorrow is my first real day of work in my profession. I’m so nervous, so of course I spent all day baking and messing with new recipes to de-stress. I made these delicious chocolate raspberry granola bars. However, I didnt really measure anything, so I can only give approximate amounts. These are healthy, delicious and packed with protein.
Ingredients:
1.5 cups dry oats
1 scoop vanilla protein powder (or use almond flour and some vanilla extract)
1 egg
1 cup fresh or defrosted raspberries
1.5 tbsp of almond butter
1/4 cup sliced almonds
1/4 cup dark cacao chocolate chips
2 tbsps greek yogurt
2 tbsp coconut oil
Instructions:
1. In a large bowl combine oats, protein powder and sliced almonds and mix
2. Add coconut oil then almond butter and mix well
3. Mix in raspberries, greek yogurt and egg
4. Add cacao chips
5. Preheat oven to 350
6. Grease a baking dish
7. Scoop mixture into baking dish and distribute evenly so its forms a rectangle and is about 1/2 inch thick
8. Bake 20-25 minutes
9. Allow to cool and then cut into granola bars. Wrap in foil and if you want to be a dork like me put stickers on the wrapper :)
