Fire truck birthday cake

I’m a little biased, but I think I have the cutest nephew ever. He loves cars, buses, trucks and basically anything with wheels, so for his birthday I decided to make him a fire truck cake. Now you guys know I try to keep things healthy and use natural ingredients and I have to say this cake came out really great and was actually relatively healthy. This recipe may looked somewhat complicated, but I promise its really not hard to do. And it makes a great kid’s cake! The baking dish I used was from AC Moore. Also if you want the fire truck to be really red, you’ll need to use food coloring. I tried to keep it more natural so I skipped it.

Ingredients:
1. Layer one:
3 bananas mashed
2 tbsp. cacao powder
2 tsp stevia
1 tsbp almond flour
1 egg

2. Layer two
2 packs cream cheese
3 eggs
3 tsp stevia
pinch of baking soda
1 tbsp. almond flour
1 cup of sour cream

3. Decoration
1 cup raspberries (fresh or frozen mashed)
1 cup sour cream
2 tsp stevia
1 cup blueberries
1/2 cup dark chocolate cacao chips
2 tsbp almond butter
1/2 cup of whipping cream or half and half

Instructions:
1. In a large bowl combine ingredients of layer 1 and mix well
2. In another large bowl (use a mixer) and combine ingredients of layer 2
3. Take a baking dish and grease it with butter or coconut oil
4. Pour the layer 1 mixture in and let it sit in the fridge for 5 minutes
5. Preheat oven to 350
6. Pour the layer 2 mixture into the baking dish and place it into the oven
7. Bake for 25 min
8. Take 3 small bowls
9. In 1 small bowl, mix together 3/4 cup sour cream, 1.5 tsp stevia and raspberries
10. In the 2nd small bowl, mix together remaining sour cream and 1/2 tsp stevia
11. In the 3rd bowl combine almond butter, cacao chips and whipping cream and heat in microwave for 30 seconds, then mix well
12. When the cake has baked for 25 minutes, turn off oven, prop open oven door and allow to cool this way for 1-2 hours (if you skip this and just take it out, it will crack. However, since you are putting icing on top the cracks wont be visible, so its your call). You do have to let it cool at room temperature regardless for about 45 min though
13. Once the cake has cooled apply raspberry icing on it (as in photo) and make tires out of the chocolate almond butter mix. Look at the photo for proper placement.
