Ingredients:
2 eggs
1 cup cottage cheese
2 tsps of Splenda
1 tbsps of flaxseeds
1/4- 1/2 cup almond flour
Pinch of baking soda
1 tsp butter
Instructions:
1. Heat a medium sized skillet with a bit of butter
2. Mix all ingredients together in bowl, if consistency is runny then add a bit more almond flour
3. Using a spoon, scoop about 1 tbsp onto the hot skillet, lower heat to low and cover the skillet
4. Cook each pancake about 1-2 minutes then flip over and cook another 30- 45sec
5. Serve with fruit of choice
(You can add 1-2 tsps cocoa powder if you want chocolate pancakes)
